My Aunty Kathleen’s Nachynka Recipe

Aunty Kathleen’s Nachynka

3 cups homo milk

1 cup hot water

salt to taste

dash of nutmeg

1/2 cup of onion

4 Tbsp butter

1 cup cornmeal

4 eggs

In one pot heat milk, water and seasonings to scalding (do not boil).  In a separate pan sauté onions and butter till translucent, do not brown Stir  in cornmeal. Add mixture of hot milk and continue to stir till boiling lightly.   Very slowly add beaten eggs, stirring constantly so they don’t scramble.  Once well mixed, spoon into buttered casserole. Bake at 325 F for 1 hour till golden on top.
